Game Day Goodies * Snickers No-Bake Peanut Butter Bites

Sundays in our house have one constant – football.

This means that just about every Sunday we throw on our jerseys (such a pro football fan thing to do) and assemble dutifully in the living room. Here’s the thing, some Sundays are great but more often than not, we’re frustrated, exasperated bunch. That’s where the sweets come in. You can only watch your QB get sacked so many times before you’re in desperate need of a pick me up.

I’m all about some chips and queso, wings and other game day apps but I’ve got a pretty aggressive sweet tooth so sweets are a lot easier for me to casually throw together; especially since I usually have all the ingredients to whip up chocolate chip cookies on tap and ready to go. Seriously, If I get invited somewhere and need to contribute to the spread – you can count on cookies. So when M&M’s and Snickers gave me the opportunity to partner with them on some game day treats, I was fully committed.

Like I said before, chocolate chip cookies are a standard but I wanted to mix it up and do something a little different. Game days at our house are pretty low-key and I wanted something to fit that mold but obviously still be delicious. I decided to try to do a No-Bake Peanut Butter pie with Snickers – swapping out the full pie for individual bites. To get started, I used this recipe from Bakarita as a guide and made some small adjustments. And of course, we had to make chocolate chip cookies with some M&M’s thrown in. Seriously these chocolate chip cookies are the best and D3 has requested we make these again as a giant M&M cookie cake for his birthday.

The great part about both of these recipes is how easy them are to throw together. No joke, you could probably throw together both of them 20 minutes before the game and have it all ready to go by the first time out. Or if you’re heading to a friends house, you can whip them up the night before, pack them up and be ready to go for the game. If you make the cookies, hot tip. Take the dough and bake them at your friend’s place. Warm cookies are the best thing ever and a welcome respite from all the queso and other cheese-heavy apps. Your sweet tooth, and anyone else you’re hanging with on gameday, will thank you.

Oh and you can find the chocolate chip cookie recipe here. Just add M&M’s to make them more colorful, more delicious and just generally better. Tip: I like to add the candies five minutes into the cookies baking, that way the are on the top and look pretty. Yes, I am vain about my cookies.

Snickers No-Bake Peanut Butter Bites

* Recipe adapted from Bakerita.com

Ingredients

* 25 chocolate cookies
* ½ stick of unsalted butter
* 1 (8 oz.) block of cream cheese
* ½ cup caramel sauce
* 1 cup powdered sugar
* 1 (8 oz.) package Cool Whip
* 3 Snickers candy bars, chopped
* ¼ cup peanuts, chopped

Directions

For the crust…
1. In a medium bowl, crush cookies into fine crumbs (you can use a food processor); Melt ½ stick of butter.
2. Pour melted butter over the cookies and stir to combine.
3. Use a small spoon to pour crust into muffin tins and press firmly.

…Making the filling
1. In a large mixer or large bowl, beat ¼ cup of the caramel sauce with the cream cheese until smooth. Add powdered sugar and beat until smooth.
2. Add in Cool Whip and beat mixture (on about medium speed) until creamy and fluffy, scraping the sides as needed to ensure everything is fully incorporated.
3. Chop up 1.5 Snickers bars and fold into mixture.
4. Spread a thin layer of caramel sauce on the bottom of each crust and sprinkle half of the chopped peanuts and ½ a chopped Snickers bars in the bottom of the crusts.
5. Pour filling into crust, evening out the top with a knife or spatula.
6. Refrigerate for 30 minutes to an hour.
7. Once they are firm, remove from muffin tins, then swirl caramel sauce around the top of each bite. Top with remaining peanuts and chopped Snickers.

Serve and be prepared for high-fives.

    Since no mention is made of tin liners, do these pop out easily from tin?

    Did you use a regular muffin tim or a mini muffin tin…
    About how many does this make.

      Hi Cindy – I used a regular muffin tin but a mini muffin tin would probably work great too. This recipe made about 24. Thanks!!
